Joe doesn't begin his new semester of Law School until later this month, so he, Emily, and A.J. flew here from Virginia to be with us for a couple of weeks. I thought my heart would burst when I saw A.J. Haven't seen him since August and how he has grown! I was worried that he wouldn't "know" his Gammie, but he is such a friendly little guy; he came right to me and we bonded right there and then.

A.J. does something that just slays me -- when anyone sings, he'll sing too! It's the craziest thing!

Little Cooks in the Kitchen

The idea popped into my when a little bird told me that Evylee was getting a mini kitchen from Santa for Christmas. IDEA: I'll make her an apron, and miniature hot pad to go with it! And while I'm at it, I'll make them for Lily and Kylie too!

Maybe it would be fun to make chef hats to top them off. Found a free pattern HERE online.

Bought some colorful cupcakes from the Sweet Tooth Fairy and made a visit to Pott's Studio.

A bit of fortune; their white dresses from their aunts' weddings in July 2010 still fit them... barely.

They had such a fun time. No trouble hamming it up, especially with the prospect of having a very special treat afterward.

It's a new year and that means a New Fitness Challenge designed and issued by my Jenni.

HERE ARE THE RULES:

1. you must commit for 3 months - January 9th - April 8th
2. All participants must provide a prize and post a picture of it.
3. Sundays are free days (nothing expected and no points given on our day of rest)
4. Daily Points will be rewarded for the following things:
* 64 oz. of WATER - 1 point
* 20 minutes of EXERCISE - 1 point (max 3 points)
* PERSONAL DIET PLAN– 1 point
5. Weekly points go as follows:
* No EATING OUT- 5 points (1 eat out meal is given freely each week. You pick and you give yourself the points.)
* Collective 2 Week Focus Goal Met – 5 points (as long as the designated focus goal is done all 7 days. These are even done on Sundays unless otherwise noted.)

I have found an app for my iPhone that will help me keep track of my eating and exercise habits. It is pretty easy and fun to use.

It's 2012... I thought it would be timely to give a family update.

Joe and Emily Fairbank are living in Charlottesville, Virginia where Joe is in his first year of Law School at the University of Virginia. Baby A.J. is their pride and joy - he's 8 months old and already "sings" with his mommy. Emily has a weekly hobby of trying new and different cupcake ideas hoping to open up her own business in the near future. It looks as if they'll be moving "home" to Boise for the summer where Joe will serve as clerk for a Federal Judge.

Matthew and Audrey Taylor are in Provo where Matthew is in his very last undergraduate semester as an English Major at BYU. This is Audrey's second year as a first grade teacher at Freedom Academy. She entertains me weekly with her "student stories" as we drive to Tabernacle Choir rehearsals together. She really ought to write a book about her little pupils.

David and Katie Collier have a home in Eagle Mountain, close enough for us to spend time with them and their sweet girls Lily (5), Kylie (3), and Paisley (1). David is teaching Math at American Fork High School and is working on his Masters at the U. Katie teaches dance a couple of times a week. They are expecting their fourth little girl at the end of May. I can't wait!

Next come Potts and me. My life is pretty much status quo; lots of music with a little knitting on the side. Potts is keeping his photography and photoshop skills in tip top shape. Enjoys sharing his immense store of knowledge in those areas. There is nothing we enjoy more than spending time with our gaggle of grandchildren! We can't seem to get enough of them.

Jenni and Mark Warner are happy as pie in Covington, Washington. Jenni teaches violin students, serves as Young Women's President in her ward, and plans friendly get-togethers. Mark still works for Boeing at home and away. Payton (6) and Sadie (3 going on 10) keep them on their toes. We miss them and wish they lived closer, but we so enjoy driving or flying up to the area for visits. Their home gives us a GREAT place to get away!

Michael and Desiree live close by in Pleasant Grove. Michael will graduate as a Biology Major at the end of this semester. They both work at 1-800 Contacts which means I get to take care of their babes, Evylee (3) and Ethan (1) once a week. What a treat! They are sweet, cuddly, and seem to love being with their Gammie and Potts.

My good children and their sweethearts mean the world to me. I am so thrilled with them and the way they are raising their own families. Potts and I couldn't be more blessed!

It's what I love most about Christmas Day...

just being together...

We have the tradition of "An evening in Bethlehem." We enjoy latkes, falafel, and pitas; fresh fruit, olives, and home-canned grape juice from my garden.

Then, a Nativity.

Kylie is Mary.

Evylee is Joseph. That's what she wanted to be.

Lily is the angel.

Paisley is our itty-bitty shepherd.

And Ethan is.... alseep.

There's extra magic this year with grand-babies in the house.

Christmas isn't just for kids...

Christmas is for Grownups too!

There is something very special about having Christmas on the Sabbath. Audrey and I were looking forward to playing Music and the Spoken Word this morning; it would have held such meaning. But when all was said and done, I'm happy we prerecorded the broadcast on Thursday night instead enabling the 500 members of the choir and orchestra to be home enjoying the morning with our families.

Music of the Season

Christmastime is a pretty special time to be a musician. It's a busy time, yes, but the music has an extra special feeling to it, not to mention the fact that it is FUN to play such a variety of music with my very best musician friends! I try to have most of my Christmas preparations finished in November, so I can just enjoy the experience. Here are this year's concerts I'd like to remember.

December 2-3 Christmas from the Ellen Eccles Theatre When Craig Jessop resigned as conductor of the Tabernacle Choir, he became the dean of the college of fine arts at Utah State. He also organized a 250 member auditioned choir in the Cache Valley, the American Festival Chorus. A handful of times each year, I am invited to perform in the orchestra that accompanies this group. I grab up the chance, despite the nightly drive to Logan, to play under his baton again; he is the personification of the joy of music. His guest artist this year was Mareen McGovern, best known for her Oscar-award-winning songs, "The Morning After" from the 1970's movie, The Poseidon Adventure, and "We May Never Love Like This Again" from The Towering Inferno. Mareen is in her 60's now, but can this woman ever sing! She is quite the inspiration.

December 4 The First Presidency Christmas Devotional My season doesn't really begin until this event held December's first Sunday each and every year. The Conference Center's 20,000 seats are filled with people eager to hear the words of a prophet and his counselors. Not to mention the millions of people viewing it over a satellite broadcast all across the world! These inspired men help us feel and remember the real reason we celebrate this special time.

President Dieter F. Uchtdorf "... Christmas and some of the cherished traditions of the season remind us that we, like the Wise Men of old, should seek the Christ and lay before Him the most precious of gifts: a broken heart and a contrite spirit. We should offer Him our love. We should give Him our willingness to take upon ourselves His name and walk in the path of discipleship. We should promise to remember Him always, to emulate His example, and to go about doing good..."

December 8-10 A Kurt Bestor Christmas I've played Kurt's concerts for many moons now. This year marks his 24th year, probably my 13th or so, I can't exactly remember when I started. His music is quite delightful to play and he puts on an entertaining show. Each year he composes a few new pieces to add to his holiday repertoire and he invites some fun and interesting guest artists. This year's was Melissa Manchester. Remember her? She's another singer popular in my teens (that means Kurt's teens too) For a refresher course about Melissa, click HERE

December 12 "The Messiah" with Utah Voices What would the Christmas Season be like without this amazingly beautiful music written 270 years ago. It it truly a gift to the world. George Frederic Handel said of it himself,

"Whether I was in my body or out of my body as I wrote it I know not. God knows."

and the music reflects pure inspiration. This concert was a rather tricky one. There were only three of us on the second violin part with only 1 and 1/2 hours to rehearse 2 1/2 hours of music. Most of the musicians have performed this work MANY times, but each conductor is different, so it isn't as easy as it may seem. We just have to concentrate like the dickens and make it look as if we know what we're doing at the same time! I enjoyed the challenge and always love playing this music.

December 15-18 Christmas with the Mormon Tabernacle Choir These are the performances I most look forward to. We practice on Tuesday and Wednesday and perform Thursday and Friday, record all afternoon Saturday with a performance Saturday night and play a mini-concert after Music and the Spoken Word on Sunday. It's an exhausting week, but it is so rewarding. This year's guest was actress Jane Seymour who was beautiful, gracious, and very professional, and baritone, Nathan Gunn who was friendly, down-to-earth, and delightful. This 2011 program will be shown on PBS next December (2012). Christmas with the Mormon Tabernacle Choir and Orchestra at Temple Square "... is the No. 1-rated entertainment program on PBS during the holidays, with more than 4 million Americans tuning in to watch it each year," PBS president and CEO Paula Kerger said. "This program showcases some of what PBS does best, to use the magic of television to showcase music, dance and the spoken word in order to inspire and entertain our audiences."

"For me, this is the gift of Christmas," said British actress Jane Seymour in a news conference Friday, the morning after the dress rehearsal of the concert in the LDS Conference Center."To be doing something that is so heartwarming and so necessary at this time, to be involved in a program that lifts people's spirits up, especially when the year's been really tough for a lot of people" is the essence of the holiday for Seymour, "the universal message of giving and receiving love."

Operatic baritone Nathan Gunn, the other guest artist, agreed. "What is really wonderful about being here, and what adds to that element of giving is that everybody's volunteering," he said. "Everybody who's here wants to be here. You don't have people running away from rehearsal. They're actually showing up early. Every single person I've spoken to, whether they're working backstage or they're in the choir or in the orchestra, have a smile on their face and really giving of themselves. That is palpable, and is something that, for me personally, helps lift up a performance to a higher level."

Snow even fell in the Conference Center! The technical crew made sure that it fell BETWEEN us and the audience as to protect our instruments, but a little bit drifted our way now and again. While playing I accidentally "sniffed" a piece of it up my nose. It tickled and burned. I composed myself as long as I could, but eventually had to stop playing and relieve the itch. I looked up at the jumbo screen and caught myself scratching my nose! I'm certain that little piece of footage will NOT be on the final PBS broadcast!

The very best part of the concert for me, is that I am able to share the entire experience with my youngest, Audrey, who performs in the Orchestra at Temple Square with me. Who would want to keep an indescribable experience like this, all to herself? It is SUCH a blessing!

December 19 The Larry H. Miller Family Christmas Carole Sing-a-long In its 27th year, the Miller Family carries on Larry Miller's Christmas Tradition even though he has passed away. We rehearse for a little over an hour, they feed us a nice dinner topped off with DELICIOUS brownies, then the event is only one hour and fifteen minutes! It's a fun and free event for the community with food and gifts of tickets and coupons. Singer, Alex Boye had people up and out of their seats dancing, singing, and having a grand time. The Jazz Bear and Santa Claus made special appearances too! I sat with Audrey for this one, just because I wanted to! We had such fun!

December 23 The Christmas Music of Mannheim Steamroller My last concert for this season. Local four violins, one viola, one cello, an oboe, a horn, and one trumpet are used to enhance the electronic contraptions they bring along. Despite the smoke machines triggering the fire alarm at Abravanel Hall during the rehearsal, this concert went off without a hitch. I'll have to admit that, though I loved every minute of playing, I let out a sigh of relief and left the hall with a spring in my step knowing that I could now return home and enjoy the next week or so with just my family! But I think as jobs go, mine is THE BEST!

Last year we remade our "family" portrait because it marked the year that every member had his/her sweetheart.

This year marks our 31st year of marriage. The family greeting card is becoming such a challenge as our family moves and grows. Potts and I decided that it was a good time to take the leap and shake things up a bit!

Fine Art Photography has been a focus for Potts this year. One of his creations it featured on this year's Christmas Card.

My New Phone

Up until my birthday, I was a fan of the simple cell phone -- just dial and talk, that's all. When Potts went to pick up the newest IPHONE, he somehow convinced me that I really NEEDED to have one too. Audrey joined us with one of her own.

I have entered the world of APS, Siri, digital calendering, texting, internet capability... you name it, this phone can do it (except wash dishes.) I'll have to admit it is loads of fun and I've become quite dependent on it.

Ethan and My New Phone

Ethan (18 months) is here for the day. He is doing his own thing up and down the stairs and I am doing mine in the kitchen. Suddenly, I hear Ethan let out a blood-curdling scream! He tries to run but trips over the baby gate and slides all the way into the kitchen on his stomach, screaming uncontrollably!

What is going on? I wonder. I scoop him up to comfort him and creep into the living room expecting to see a big hairy monster or something. It was then that I heard it; a quacking coming from my purse. My new phone was "ringing" the DUCK sound I had programmed on it. "QUACK - QUACK-QUACK-QUACK!" It had scared the little guy to death! I laughed and pulled it out of my purse to show him. He stopped crying immediately with a puzzled "what?" look on his face.

So cute! I giggle every time I think about it.

Today is Veteran's Day and holds a very significant date. I figure it would be good to record what I did to commemorate.

You can't see me because the orchestra is pretty much hidden down in front, but I'm here at the Cathedral of the Madeline, performing Benjamin Britten's War Requiem with Craig Jessop's American Festival Chorus from Cache Valley.

Here is the background and a description of this work --

Benjamin Britten was a life long pacifist, so it was only natural for him to write something like the War Requiem where he could express his personal feelings. The work was written for a specific occasion – the 1962 rededication of Coventry Cathedral, which had been destroyed in the early days of World War II – but its appeal is universal and timeless. Many anti war works have come out of the 20th century, but certainly none has made a greater impact than Britten’s, in large part because the horrors of war depicted here are viewed through the eyes of the common soldier.

In the War Requiem, Britten deftly blends the traditional text of the Catholic Mass for the dead with selected poems by Wilfred Owen, a young British soldier killed in the final days of World War I who graphically yet eloquently describes what it feels like to experience war firsthand. And the War Requiem’s impact comes from this remarkable blending of the ancient words from the requiem and Owen’s evocative and at times spiritually tinged poems. The War Requiem is a work from the heart.

Last Day on Maui

It's our last day on Maui. We attended church at the ward building just a hop, skip, and a jump down the road from our hotel. The cultural hall was filled with vacationers such as ourselves and included a couple from our stake and Randy's former employer, Scott, and his wife Dianne.

The hotel required an early 10:00 am checkout, so when we returned, Wayne and Marsha were ready to hit the road. We had a few hours before airport check-in time, so we drove up and over the top of the island to areas that we had not yet visited... until we checked the gas gauge, which was on empty, and we had to pray our way back to civilization and a gas station.

Spotted wild peacocks along the roadside.

Visited the spectacular Tao Needle.

Experienced a spectacular "above the clouds" sunset as we made our way to the Honolulu Airport...

And then home on the red-eye.

I've mentioned these amazing trees before. We found a park full of them on Kuai last trip. Wayne has photographed them previously here on Maui, and knew right where to take us.

This evening, there was an actual rainbow at the rainbow eucalyptus.

Photographic Study - Bamboo Forest and Waimoku Falls

On Wednesday, we took the famous Road to Hana. Over 600 curves and 50 one-lane bridges! Fifty two miles took us about two and one-half hours to traverse. We stopped the car only a couple of times because yours truly begged to photograph of a couple of the numerous waterfalls we drove by.

The men had their sights on the Bamboo Forest of Haleakala National Park and made a B-line for that. I couldn't be this close to what used to be called the "Seven Sacred Pools" and not even see them, so while the men hiked up to the Bamboo Forest, I hiked down to the pools.

And so did everyone else!

Too many bodies for me! I went the other way to a spectacular view of the ocean...

... then headed up the Pipiwai Trail to meet up with the men.

A picturesque trail and for the most part, I had it all to myself!

Fifteen minutes into the hike, I realized I should have packed some water! I was getting parched! The men hadn't packed any either, and they were toting all their camera equipment! Note to self: If you ever come again, bring WATER!

A giant Banyon Tree loomed before me. There is no way of showing just how big it really was in a photograph, so you'll just have to trust me; it was GINORMOUS!

About a mile up the trail, I finally came to the unmistakable Bamboo Forest and met some hikers coming down. "Have you seen a coupe of VERY SERIOUS photographers?" I asked. "Yup! They're up around the corner a little ways."

The bamboo forest is incredible. A path has been swathed and a boardwalk built right in the middle. The foliage is so thick that there is very little light inside and as the breeze hits the bamboo, the shoots knock against each other creating mystical music.

I found the men doing what they do.

We didn't stop at the Bamboo Forest, but ventured another .6 miles up. Not all trails have a PRIZE at the end of the path, but this one does!

Waimoku Falls

Of course I ignored the "Falling Rocks" warning and went right up to the bottom of the falls to feel the spray on my face. Ahhhh....

No. I didn't jump into the pool; but I WANTED to!

Took the less traveled way back around rather than the Road from Hana. Drove on dirt for about fifteen miles then had paved road the rest of the way. It really wasn't as bad as some would have believed and saved us a good hour.

Photographic Study - Kapalua Bay and the Coastal Trail

Today we checked out the Coastal Trail and drove a little further north searching for tonight's sunset spot.

Came across these VERY interesting lava formations - a photographic subject for another day.

The men decided on Kapalua Bay and began photographing the beach while I took a little hike down the Coastal Trail. Randy called my phone, "What are the palm trees like where you are?" I began describing them verbally, then suddenly realized I could just take a photo with my new phone!

Which I did and sent to him. He immediately packed up his gear and moved from the sand to where I was on the trail. (I must have done all right!)

Photography Study - Secret Cove

The reason we are here (besides to eat amazing food and enjoy time together) is to give the men the opportunity to capture some amazing images. Wayne has dreamed of opening a Gallery and it looks as if it just might happen.

So... we spend each afternoon scouting out a place to capture the sunset. If you know much about photography you realize that early morning and evening light are the most pleasing. Midday is to be avoided.

Today we searched the Wailea side of the island for the perfect beach and happened upon Secret Cove, given this nickname because if you don't know it's here, you will probably miss it; it isn't visible from the road. But Wayne is very thorough with his IPAD and his research. The real name for this beach is Paako Beach (I snapped this photograph with my IPHONE - in the middle of the day.)

When we returned at days end, we found that because it is a chosen location for sunset photographs, it is also a favorite spot for weddings of which there were two this evening.

Wayne and Marsha have been to Maui sixteen times. They are experienced Maui dinner goers and know all the VERY BEST spots. Wayne's philosophy is that eating out should be as much of an adventure as the rest of the trip. Food-lover that I am, I couldn't agree more.

Cane and Taro

On the Ka'anipali Beach, a ten-minute walk from the hotel at Whaler's Village - an open-air restaurant (as many are here) where one can enjoy the sound of the ocean waves. It was our first evening here. I was so completely jet-lagged that I felt I was eating dinner at 1:00 in the morning! Thus, my stomach said, "No Food!"

I kept it light and had "The Wedge," a wedge of iceberg lettuce with grape tomatoes and sprinkles of egg, bacon, chives, and herb crostini topped with Russian Dressing. It was quite delicious!

Cheeseburger in Paradise BBQ Jerk Ribs

Jerk Paste

1/3 cup plus 1 tablespoon red wine vinegar

1 habanero pepper (scotch bonnet), coarsely chopped

1/4 cup dark brown sugar

4 garlic cloves, quartered

2 green onions, chopped

1 tablespoon chopped parsley

1 tablespoon lemon juice

2 teaspoons ground allspice

2 teaspoons paprika

2 teaspoons salt

1 1/4 teaspoons ground black pepper

1 teaspoon dried thyme

1/4 teaspoon cinnamon

1/4 teaspoon ground clove

1/4 teaspoon ground ginger

1/4 teaspoon coriander

1/2 cup butter

4 racks pork baby back ribs

BBQ Sauce

1 cup ketchup

3/4 cup red wine vinegar

1/2 cup dark brown sugar

1/4 cup molasses

2 teaspoons hickory liquid smoke

1/2 teaspoon salt

1 teaspoon ground black pepper

1 teaspoon ground mustard seed

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1/4 teaspoon ground cayenne pepper

1. Make jerk paste by combining all ingredients, except butter in

a food processor or blender, and blend until no big chunks of garlic

are visible. Pour mixture into a medium saucepan and add butter. Cook

over medium heat until bubbling then reduce heat and simmer for 2

minutes. Brush jerk paste on underside (bony side) of ribs, then flip

'em over and brush paste on the meaty side.

2. Preheat oven to 250 degrees F. Place ribs on baking sheets with

the meaty side up and bake for 1 1/2 hours. Flip each rack over onto

large pieces of aluminum foil and wrap tightly. Be sure the meaty side

is down now, and bake for another 1 to 1 1/2 hours or until the meat

is tender. The cut ends of the bones should now be sticking out about

1/4 inch.

3. While your ribs are cooking make the BBQ sauce by combining all

ingredients in a medium saucepan. Bring to a boil, then reduce heat

and simmer sauce for 30 minutes. Cool, cover and chill until you are

ready to grill your ribs.

4. When the ribs are done remove them from the oven and let them

cool in the foil for 15 to 20 minutes. Preheat your barbecue to

med/high. Use tongs to remove the ribs from the foil and place them on

the pre-heated grill with the bony side facing the heat (ribs curving

down). Cook for 2 to 3 minutes, or until browned, then flip ribs over

onto the meaty side. Brush the grilled bony side (now face-up) with

BBQ sauce, and cook for another 2 to 3 minutes until grill marks

develop on the meat. Flip the ribs over onto a serving platter when

you remove them from the heat and brush the just-grilled meaty side

with BBQ sauce.

Makes 4 large servings.

Bubba Gump

Inspired by the 1994 movie, Forest Gump. The Bubba Gump restaurant is named after the film's characters Benjamin Buford "Bubba" Blue and Forrest Gump and had movie paraphernalia. There are 32 restaurants world-wide. The one we visited in Lahaina is built right around a giant banyan tree which grows up and out the top. It is Wayne and Marsha's favorite place. Understandably so!

"Anyway, like I was sayin', shrimp is the fruit of the sea. You can barbecue it, boil it, broil it, bake it, saute it. Dey's uh, shrimp-kabobs, shrimp creole, shrimp gumbo. Pan fried, deep fried, stir-fried. There's pineapple shrimp, lemon shrimp, coconut shrimp, pepper shrimp, shrimp soup, shrimp stew, shrimp salad, shrimp and potatoes, shrimp burger, shrimp sandwich. That- that's about it."

I ordered the “I’m Stuffed!” Shrimp - Large Shrimp with Crab Stuffing, baked in Garlic Butter, and topped with Monterey Jack Cheese. Served with Jasmine Rice. It was a mouthful of heaven!

Bubba Gump Hush Puppies

INGREDIENTS:
2 cups self-rising cornmeal 1 cup self-rising flour 1/2 teaspoon salt 3 tablespoons sugar 3 large eggs, lightly beaten 1/2 cup milk 1 1/2 cup shredded cheddar cheese 2 jalapeno peppers, seeded and chopped 1 (17oz) can cream-style corn 1 large onion, chopped vegetable oil

PREPARATION:
Combine first 4 ingredients in a large bowl. Combine eggs and milk; add to dry ingredients, stirring just until moistened. Stir in cheese, pepper, corn, and onion (do not over-stir batter).   Pour oil to depth of 2 inches into a small Dutch oven; heat to 375*. Carefully drop batter by rounded tablespoons into oil; fry puppies, a few at a time, 3 minutes or until golden brown, turning once. Drain on paper towels.

Hard Rock Cafe

Ate late at the Hard Rock Cafe after our long day on the road to Hana and our four-hour hike (without water) to the bamboo forest and on to Waimoku Falls. I was mostly interested in gallons of ice water and Potts and I split a pulled pork sandwich because we weren't very hungry -- just exhausted.

Here is a copycat recipe for their

Pulled Pork

3 lbs pork shoulder 

1 quart hot water 

1 quart apple-cider vinegar

1/2 cup Tabasco sauce

1/2 cup granulated sugar

In a large bowl, combine apple-cider vinegar, Tabasco sauce, sugar and hot water. Stir until sugar is dissolved. Pour marinade over pork, cover and refrigerate for at least 12 hours.

Remove pork from marinade and place in a baking pan. Cook in a preheated 450 degree F oven until browned. Pour some marinade over pork, lower temperature to 300 degrees F, cover and slow-roast for an additional two hours or until meat pulls away easily from the bone. Serve!

Hard Rock Café BBQ Beans

Ingredients:

2 (15-oz) cans pinto beans(with liquid) 

1/2 cup ketchup 

1/3 cup white vinegar 

1/4 cup brown sugar 

2 tablespoons diced onion 

1 teaspoon prepared mustard 

2 tablespoons water 

2 teaspoons cornstarch 

1/2 teaspoon chili powder 

1/4 teaspoon salt 

1/4 teaspoon coarse ground black pepper 

1/2 cup cooked bacon

Instructions:

1. Preheat oven to 350 degrees F

2. Pour entire contents of the can of pinto beans into a casserole dish

3. Dissolve the cornstarch in a small bowl with the 2 tablespoons of water.

4. Add this solution to the beans and stir

5. Add the remaining ingredients to the dish, stir well and cover

6. Bake for 90 minutes or until the sauce thickens.

7. Stir every 30 minutes.

8. After removing the beans from the oven, let the beans cool for 5 to 10 minutes before serving.

My personal favorite. I enjoyed a delicious Salmon with tomatoes, capers, and lemon sauce. Makes my mouth water just thinking about it!

Found their recipe for their artichoke appetizer. We didn't have it, but I noticed someone who did!

Artichoke Longhi Maui

4 Large Globe Artichokes

1/2 Cup Grated Parmigiana-Reggiano

Juice of 1 lemon

2 Sticks [1 Cup] Butter

To prepare the artichokes, cut off their stems and remove the tough outer leaves with scissors. cut off the top inch of each artichoke.

Steam or boil the artichokes for 20 minutes, until the heart is tender when pierced with a fork. Remove the artichoke from the steamer or cooking vessel. Spread the leaves on the top, then reach in and grab the inner pointy leaves and pull these out. Underneath this you will see the hairs of the artichoke; directly underneath these are the heart. Carefully spoon out the hairs but do not go too deep into the heart. You can prepare the artichokes up to 6 hours in advance. reheating them in boiling water or a steamer.

Sprinkle each hot artichoke with Parmesan. In a small saucepan bring lemon juice to a boil; add chunks of cold butter and stir constantly so the sauce does not break. When the butter is fully melted, pour over the artichokes

Joined Michael for lunch at the Bistro Molokini. My turkey sandwich was just so... so... but Pott's fish and chips were amazing! I snuck them off his plate while he was visiting. grin

Kimos

Any idea what Hula Pie is? I didn't have a clue until I came to Hawaii. It's an Macadamia Nut Ice Cream pie and is part of the Hawaiian eating experience. We had one of a little different variety at Kimos. Oreo crust, stawberrry ice cream with a hot fudge drizzle.

Kimo's Hula Pie

Ingredients:

1 (9-inch size) chocolate cookie crumb crust

1 quart macadamia nut ice cream, softened

1 jar (12 ounce size) hot fudge ice cream topping

1 container (8 ounce size) Cool Whip

1 jar (3 ounce size) macadamia nuts, chopped

Directions:

Fill pie crust with ice cream and re-freeze until firm.

To serve, top with fudge, cool whip and sprinkle with nuts.

The best surprise at Kimos was happening upon a full Friday night "concert" by Uncle Willie K. He was setting up as we were finishing our dinner, began playing during our Stawberry Hula Pie and we just stuck around. We were at the table right in front of the speakers. The first half of his performance was a sprinkling of this, that, and the other... Hawaiian, but not sappy Hawaiian, some blue grass, Italian opera, and some of his original compositions. I could tell from the minute he began that he was legitimate musician.

As the evening progressed, the "music" became LOUDER and more RAUCAS. I tried to protect my ear that was closest to the speaker, but it was POUNDED regardless and I left the place half deafened. Michael, you would have loved it! smile.

I'm a Water Baby!

Anyone who really knows me, knows when water is nearby, I have to be IN it! So when we found ourselves as "just the two of us," we dove in.

The Resort Pool. Why in the world would we choose a pool when the ocean is right out our doorway? Because it was SO inviting! Water falls, a slide - and besides that, the other pool comers just lounged BY the pool, so we pretty much had the water all to ourselves.

I have a little Olympus Camera that will shoot up to ten feet underwater. It's pretty fun to play with.

Aboard the Quicksilver for a snorkel adventure to the Molokini Crater and Turtle Town.

I'll have to admit that we saw more snorkeling bodies, than other sea life...

... but the boat ride was fun, the lunch was delicious...

... and we did spot ONE turtle at Turtle Town, so our trip was complete.

Walked the Beach at Kihei and watched the black crabs on the black rock. There were hundreds of them and they looked like creepy spiders! Gave me the willies!

Snorkeling at Kapalua Bay. Better than the boat excursion and less bodies to swim around.

The Very Best Water Adventure was a hop, skip and a jump down our own Ka'anapali Beach.

Randy mentioned that it was the closest to the feeling of scuba diving than any other place he had experienced.

While floating along in a state of awe, I came face to face with a giant turtle swimming up for air. It scared me to death, and I hollered for Randy who happened to have the camera!

Maui

I know it's crazy, but it's true! Randy and I find ourselves in Hawaii for a SECOND occasion this year. This time on Maui, a first for me.

Our friends, Wayne and Marsha, have a time share at the Marriott Ocean Club on the Ka'anapali Beach; they invited us to come "share" it with them for a week. Of course we jumped at the chance -- who wouldn't?!

We are on the 12th floor and have a wonderful view of the beach. I have some difficulty with jet lag which gives me the opportunity to watch the sun rise each morning from our balcony.

It didn't take long for us to find OUR spot with the ocean waves and their soothing sounds to lull us into a sense of euphoria.

A Fascinating Creation

The Utah Symphony asked me to join them for a short Chamber Education Tour to Junction and Tropic, two very small communities near Bryce Canyon. Hoping to have Potts come along, I convinced him that the opportunity to photograph the area was really a MUST!

The "tour" consisted of one 45-minute concert at Piute High School Wednesday afternoon, a stay at Ruby's Inn (just a five-minute drive from the canyon) and two 45-minute concerts the next morning at Bryce Valley High School; no evening performance.

What?! An entire evening free?

We took the opportunity to hike down into Bryce Canyon via the Navajo Trail.

Hiking DOWN was a blast!

This tree had to S T R E T C H to reach the light!

It's a slow go when one has a husband with a camera and the surroundings are ABSOLUTELY AMAZING! But that's what I love about being with him -- it gives me the chance to "soak it all in."

He who goes down, must come up. I wish all paths were downhill!

The Navajo Trail comes back up at Thor's Hammer. This photograph was actually taken at sunrise the next morning.

Met the funniest raven when we visited Sunset Point. He was the tamest bird I have ever seen. He didn't mind if we walked right up to his face with Potts' big camera. He posed for us, then hopped off the fence and over to our car where he looked up at us as if to say, "May I?" We gave him the okay and he proceeded to clean all the bugs off our grill. It was great!

Watched the sun set and the moon rise at Inspiration Point.

On My Birthday!

My good friend, Meredith, and I have the same birthday. She is Concert Master and my stand partner in the Orchestra at Temple Square and contractor for many of the studio jobs I am involved in. Consequently, for the past fifteen years, we have spent at least half of our birthdays celebrating together in one way or another. Tonight was no exception.

Our Autumn Orchestra at Temple Square Concert landed on our day. As is customary at the end of a concert, flowers are presented to our conductor, Igor Gruppman and the evening's soloist. Tonight, Igor had planned ahead, divided his own flowers in two, and on stage during the final applause, presented them to Meredith and me and whispered a "Happy Birthday." It was very sweet and I was so touched.

The flowers were stunningly beautiful!

And when I arrived home, Potts (who had been to the concert the night before) had a candlelight dinner awaiting me. He was adorable and I felt SO loved! I'm grateful I married a romantic.

It Isn't Over Until...

We made the most of our 12-hour overnight layover in Amsterdam by checking into the Citizen M Hotel one block from the airport. A good-night's sleep sounded SO inviting.

Very upbeat, very clean, very comfortable.

The privacy hanger said, "Don't come in; there's someone naked in here."

A pretty fair warning considering the shower is right IN the bedroom.

They even provided shower gel/shampoo for morning or evening.

AND a stuffed animal.

Our morning wake up call consisted of

very gentle songbirds,

then monkeys, lions, and various other jungle animals,

then elephants blasting as loud as possible!

It made us laugh.

And with that, we made our way home.

Farmaceutica Novella

Today is the day we head for home.

Kristen, Drake's niece, found herself alone in Florence for an unexpected day, so we spent the morning with her scouting out a few favored places that we hadn't yet seen.

FIRST STOP - the National Museum. Closed.

SECOND STOP - The Medici Chapel. Closed.

But we were able to walk through its adjoining courtyard.

THIRD AND FINAL STOP - The Farmaceutica Novella. OPEN!

Open the heavy doors, and the aroma nearly knocks you over!

It was like walking into Harry Potter's potions emporium!

Herbs and Elixirs for every ailment known to muggle.

Once the Santa Maria Novella church, monks began concocting herbal remedies here in the 13th century. It is one of the world's oldest pharmacies.

"The monks' simple apparatus for distilling flower water rests inside wooden cabinets, flanked by old containers used for lotions and potions, lists of ingredients and even the monks' original recipe ledgers. Merchandise lines the walls of the dimly lit, frescoed rooms—all manner of soaps, sachets and scents, many made according to ancient formulas."

The amazing frescos give evidence of the former church.

We found these walls depicting the life of Christ especially captivating.

We had one last night at our funny little hotel room...

...with the funny little bathroom...

...and the funny little shower.

And one last evening in Florence.

We enjoyed our lasagna and spaghetti carbonara with some friends from the trip including the very entertaining Christine who met Kate from London in the elevator of her hotel and invited her to dinner with us! Who does that!?

I had difficulty keeping my mind on the dinner conversation... these street musicians had my full attention.

I am amazed by the chalk art on the streets.

I can't believe an artist will so much time and talent, just to have this swept away by the rain or a street sweeper the next day!

Potts and I took a walk to the Arnos river...

Then spent the remainder of the evening on the steps across from the Uffizi Museum listening to a solo guitar. What could be more romantic?

Don't worry, this is NOT a questionable hand gesture; Potts is teaching how to find favorable light for portraiture.

On our way back to the farm, we stopped to photograph a local vineyard.

The owners delightedly fed us bruschetta, sheep cheese and prosciutto. We were offered a taste of their local wine as well. As you might expect there weren't many "takers" from our group of mostly Utahans.

The Bosco della Ragnaia

Near Pieve a Salti is the very small village of San Giovani d'Asso. Home to only a couple hundred people, I didn't remember it being the most exciting place to photograph last time I was here.

We DID spell our names here in 2009, and that's about all I remember of the village except for one lone cypress tree.

This year we were told we should visit "the park" down the road.

What a beautiful surprise! I had NO IDEA this was here!

Randy went back to the bus to get his tripod; I kept walking...

and walking...

... not really expecting to see much more than we had already seen.

Until I came to a ledge and looked down at THIS!

It honestly took my breath away.

I took the steps down and began to explore...

... all the while hoping that Randy would return

... before the sun went down.

I had this fantastic park all to myself!

Little did I know that for the past 20 minutes Potts had been frantically looking for me. He had whistled "our whistle" but he hadn't heard me whistle back. He had been running here there and everywhere trying to find me!

All the while I was leisurely enjoying my time, taking pictures as I sauntered.

By the time we found each other, he only had time for a couple of photographs.

This sign reads, "Everywhere you can see part of it. Nowhere can you see all of it."

A very fitting description of this magical spot.

Such a fascinating place! We will have to return again... together!

When we returned to our room, I searched the internet for more information.

The Bosco della Ragnaia is a woodland park and garden created by the American artist Sheppard Craige at San Giovanni d’Asso, a small town near Siena, Italy. Although some parts may appear ancient, the park is a contemporary work that began in 1996 and continues today.

Under tall oaks one may find many inscriptions that gather moss while waiting to be noticed by a visitor. Some will be familiar, others enigmatic, while yet others merely express Sheppard’s sense of whimsy. Notable built features include: an Altar to Scepticism, the Center of the Universe, and an Oracle of Yourself. The Bosco does not offer a meaning, but is, on the contrary, open to all interpretations.

Sheppard tells of a time long ago when the woods was ruled by Sages. He repeats the sonorous question with which they concluded all their incantations: Se Non Qui, Dove? (If Not Here, Where?)

“My wife often says to me: 'You spent all those years getting yourself educated; now all you do is dig in the mud’,” says Craige, who has an unnerving tendency of appearing when least expected out of the foliage, his shock of white hair and little round glasses giving him a wood-nymph air. “But this is my creation. What better thing to do with an education?”

Our "Home" in Tuscany

In the "middle of nowhere" in the hills of Tuscany is a working farm which doubles as a Bed and Breakfast.

Pieve a Salti is spread over 700 acres. Seven refurbished buildings house the farm's visitors.

This year Randy and I are above the kitchen.

Each morning we are awakened by the smell of fresh croissants.

Spotted a "movie star" at breakfast. He got his food then sat outside with his back to us. I think he was attempting to be anonymous, but I came face to face with him when he came into the breakfast room and asked for salt. He smiled at me in a charming way as if to say, “You recognize me; yes, I am who you think I am.” He is probably in his 60’s now. Might have been in some James Bond type film. Wish I had a picture of him, then you could help me figure out just who he was.

Speaking of food; in the evenings we bus a mile up the road to the restaurant for our five course, two hour, Tuscan dinner experience. I'll have to admit I really look forward to these. The food here is amazing. This year we were able to coerce the chief into printing up the soup recipes for us. So here they are for you - just as he gave them to us.

Pappa al pomodoro
(Tomato Bread Soup)
Ingredients:
4 garlic cloves, 2 basil leaves, 1 kg of peeled tomatoes (just over 2 lbs.), 2 dl of extra virgin olive oil (about 3/4 cup), 500 gr of stale bread (about 1 pound), salt and pepper

Clean the garlic and smash it. Put it in a pan with the olive oil. Let brown the garlic and add the peeled tomatoes. Let it cook for 15 minutes, salt it and add some pepper, cut the bread and add it to the sauce. Let it boil for 30 minutes. Add the basil that you cut before, let it boil for another 5 minutes.

Zuppa di fagioli
(Bean Soup)
Ingredients:
2 celeries, 1 kg of golden onion (5 small onions), 1/2 kg (about 1 lb.) of beans (to soak the day before), 300 gr (a little over 1/2 lb.) of tomato pulp, 1/2 glass of extra virgin olive oil, salt, 1 liter of broth, 8 slices of toasted bread.

Boil the beans. Chop the onion and celery and brown with 1/2 glass of oil. Once they are golden add the tomato pulp and cook it for 15 min. Add half entire beans and the other on half smooth. Add broth and cook for 40/45 minutes.

Serve with toasted bread and add a dash of olive oil.

There is an indoor pool by our rooms; I’ve been in that pool each year we have come.

The outdoor pool way down by the restaurant has been calling me. I have seen it every Tuscany day on four trips here. It looks SO inviting, but is a ways out of the way and some years the weather has been a bit on the chilly side. But today... Randy actually had a morning off! A first for Drake Workshop. The bus was heading to the restaurant for those who signed up for a cooking class. Randy and I hopped the bus with our water gear in hand and spent the morning swimming in the COLD, ABSOLUTELY CLEAR swimming pool. Took my breath away at first, but you know me, I’m a cold water girl, and it didn’t take long for me to adjust.

And who can beat the surrounding Tuscan landscape!

P.S. I saw the movie star again. Got up the gumption to ask him if he was in the movies and what his name might be. He told me he was traveling "incognito" and wouldn't even give me a hint. A Lazy Day in Siena

Siena's Duomo was begun in the 12th century.

In the center of Siena is the shell-shaped Piazza del Campo. Designed before the 13th century as a marketplace, now it will remind you of a kind of brick beach where people meet and lounge and rest.

Of course, this horse race caught my interest, so I did a little research.

What do you get if you cross the Kentucky Derby with with Roller Derby? What ever it is, it would bear a close resemblance to Italy’s Palio di Siena. This is a horse race like none you’ve ever seen. Held twice a year on July2, and August 16 in Siena, Italy...

The field is made up of ten riders and horses from the seventeen Contrades (city divisions with names like Eagle, Caterpillar, Dragon, Seashell, Snail... how would you like to be in that group? ) . The first 7 allowed are the Contrades that did not get to run in the previous years race for that month. The other three are selected by a draw. Stable owners offer the pick of horses, and many more are often selected from other races held in Italy. The rules state that they must not be pure-bred horses, and all are screened by veterinarians for breed, health, and drugs. The final 10 horses are selected from the ones that pass the screenings by representatives of each Contrada. To keep the contest even, a lottery is held to determine which rider gets which horse.

Riders are not hindered by any rules, short of direct homicide. Quirts can be used on a riders own mount, as well as the rider and horse of other riders. And horses can be interfered with before the race as well, prompting riders to not leave their horses unattended. The race is restricted to a short 90-second run to limit the mayhem. The track is narrow, and spills are common. A downed rider and horse will almost certainly get trampled, sometimes seriously. Oh, and one other thing….the race is run bareback. Saddles are not allowed.

The object seems to be less about winning, than about keeping your rival Contrada from winning. A riderless horse crossing the finish line first is still the winner. The winning horse’s rider gets a highly prized hand-painted silk banner, and is treated to a very enthusiastic series of victory celebrations, sometimes so extreme as to require hospitalization.

Then back to the piazza for some people watching.

After dark, we finished the day with the other photographers at the Spadaforte Pizzeria on the edge of the piazza.

This is my fourth time to Tuscany and I STILL can't keep all the village names straight. Time to pull out my itinerary AGAIN! So many begin with "Monte" (which means mount). Each village is built as a walled fortress on the highest point of an area. In many cases it is quite a climb to the top.

This charming little village was recommended by a local who declared it his favorite.

It was our first visit here.

It was spotlessly clean and quiet.

And We're Off Again. Week Two. TUSCANY

We met the Tuscany participants at the Florence airport. Thirty-two in this week's group - half remained from the first week, half were new. Two were professionals with their husbands. There seemed to be a different dynamic with this crew. The week will tell!

San Gimignano

As we entered town, we met a statue.

She was so cute, I just had to drop some money into the pot.

First Stop - in our estimation, the BEST Gelateria in Italy.

While Potts taught on the steps of the Duomo...

... I continued roaming around the village.

Upon leaving the San Gimignano, we were caught in an intense rain storm. We all huddled under a tree, attempting to keep all the cameras protected while we waited for the bus. (It was a pretty good way to get to know the new group.) By the time the bus driver pulled around, we were soaked to the bone!

One more stop before todays final destination - Monteriggioni

Potts had photographed this very small medieval village MANY times and needed a break from packing his photo equipment around, so I brought in our little Cannon and recorded this year's visit.

Tiny flower that looked as if it was tied up in satin ribbons.

I think this is my favorite shot of the day. Doesn't it make you want to peak inside?

The bus took those of us staying for Week Two to Florence where we had the evening to ourselves. As in years past, we stayed at the Hotel Olympia, with it's teeny tiny elevator and where the toilets and sinks are actually in the shower. Hey! This time we at least had wooden double doors to the bathroom! I think they converted a closet or something.

No... Potts is NOT really "on the potty", he is just in the picture to add interest.

Here is the view from our window. I balanced the camera on the ledge. Glad I didn't drop it!

Florence is a city with action from morning to the wee hours of the night, but we were so exhausted that we ventured out just for a panini and some gelato. Then we hit the hay. The rock band playing on the piazza below didn't even keep us from our sleep.

The Lakes People

One of the very BEST parts of the trip are the people that come along.

They come from every walk of life - psychologists, executives, radiologists, nurses, architects, attorneys, engineers, homemakers, and one 14-year-old. Only three are professional photographers. Drake, Randy, and Sy. Only four (maybe six) were new to the workshop and came as first-timers.

They are fun, friendly, and extremely teachable...

and have one thing in common...

a passion for photography and by the time we are finished,

a great love for the country of Italy.

That's why WE keep coming back.

Last Stop in the Lakes District

Varenna There's a cool walkway into the village.

They have one of the BEST gelato shops.

I purchased my one and only souvenir from the Lakes District here. (Besides all the gelato that I will bring back around my middle!)

I do believe it is my favorite village of all.

The water had been calling me all week. I couldn't leave Lake Como without swimming in it first. Somehow I coerced Randy to come with me. And Kate wouldn't let us back out 'cause she wanted to come too. The only convenient place we could find to go in was near the boats by our hotel. It really wasn't quite the memorable experience of Lake Orta a few years back. It was quite cold, which has never bothered me before, but a gazillion flies were buzzing right at eye level. We only had the gumption to swim to the nearest buoy and back. At least I could say I did it!

P.S. When I climbed out, I found that I had cut my right foot. It bled all the way back to the hotel. Kind of gross!

Potts' time is taken teaching, coaching, encouraging, but that's okay; that's why he's here and he absolutely loves to share all the accumulated knowledge he has stored upstairs. I thoroughly enjoy seeing him in action.

This is what's nice about knitting; I can stay busy and somewhat productive and still converse others and take in everything that is going on around me.
